Hello Sophisticated Spenders!
We’ve reached the last week of Cycle 2 of the #LunchStreak!
I hope you are realizing that packing a lunch isn’t crazy hard or inconvenient.
Since I’ll be traveling, I will try to stick to my #LunchStreak and take my lunch with me.
In the interest of time I actually cheated this week.
I made mason jar “salads” that will transition to tacos.
Here’s the recipe:
- Head to grocery store.
- Buy fresh salsa and guacamole.
- I also bought mushrooms, cooked shrimp and any kind of green salad.
- Layer items in a mason jar.
- Optional: buy taco shells if you aren’t a salad person (like me) and scoop items onto taco shells.

It’s THAT easy. I was crazy short on time this week so I opted for the pre-made guacamole, salsa and shrimp. (The kale salad was also fresh made. And it has brussel sprouts and a few other things too!) Don’t get this confused with the stuff that’s sold in jars. I am not a fan of canned salsa or meats. I got this stuff from the butcher and deli counters!
